1 Box of Barilla® Chickpea Orzo pasta
½ Cup baby cucumber, small diced
½ Cup shelled pistachios, salted, and roasted, roughly chopped
Cup fresh herbs, chopped (basil, parsley, tarragon, or chives)
Cup diced red bell pepper
2 Cloves garlic, minced
Cup diced red onion
½ Cup feta cheese, crumbled
½ Cup small radish, diced
½ Cup shredded carrot, chopped
½ Cup pickled and sliced mild banana peppers, chopped
½ Cup Kalamata olives, chopped
Cup extra virgin olive oil
¼ Cup white balsamic vinegar
½ Teaspoon kosher salt
½ Teaspoon fresh ground black pepper
12 Small romaine or butter lettuce leaves (optional)

Method
