1 | Box Barilla® Protein+® Rigatoni pasta |
6 | Ounces thick cut bacon (optional) |
3 | Tablespoons extra virgin olive oil |
2 | Cloves garlic, minced |
1 | Cup crushed tomatoes |
1 | Pint multi-color cherry tomatoes, halved |
6 | Cups baby arugula |
½ | Cup Parmigiano-Reggiano cheese, grated, divided |
To taste | Sea salt and black pepper |

Method
Step 1
Preheat oven to 400° F. Place bacon on a sheet tray. Cook bacon for 10-12 min. or until done. Cut bacon into strips and set aside.
Step 2
In a skillet over medium/high heat add olive oil and garlic. Cook until fragrant, about 30 seconds. Add cherry tomatoes and cook for 4-5 min. or until tomatoes start to burst. Add crushed tomatoes, season, and bring to a simmer.
Step 3
Cook pasta according to package directions. Drain pasta reserving 1 cup of pasta cooking water. Add pasta and arugula to the skillet and toss well. Add ¼ cup of the pasta cooking water, more if needed. Remove from the fire.
Step 4
Add cream, salt and pepper and bring the sauce to a boil. Then add drained pasta and toss with the sauce for one minute.
Step 5
Add ½ of the cheese and mix well. Top with remaining cheese and bacon (optional).
