The sauce is comprised of chili flakes, onion, garlic, and tomato paste seared in extra virgin olive oil. Vodka and cream are added then reduced and tossed with perfectly al dente Barilla Protein+® Rigatoni pasta.

4 | Tablespoons extra virgin olive oil |
½ | Cup yellow onion, small dice |
2 | Cloves garlic, minced |
½ | Cup tomato paste |
1 | Teaspoon crushed red pepper |
¼ | Cup vodka |
1 | Cups heavy cream |
½ | Cup Parmigiano-Reggiano cheese, grated |
1 | Tablespoon parsley, chopped |
To taste | Sea salt and black pepper |

Method
Step 1
Bring a large pot of water to a boil and cook pasta according to package directions.
Step 2
Meanwhile, in a skillet over medium heat add olive oil, onion, garlic, and crushed red pepper. Cook 2-3 min. then add tomato paste cooking an additional 2-3 min.
Step 3
Add vodka and evaporate by half.
Step 4
Add cream, salt and pepper and bring the sauce to a boil. Then add drained pasta and toss with the sauce for one minute.
Step 5
Top with cheese and parsley before serving.
