Sicilian Spaghetti with Crispy Breadcrumbs

Often referred to as "St. Joseph's Day" pasta, this Spaghetti recipe with Bread Crumbs, Raisins and Red Onion originates from the Italian region of Sicily. The breadcrumbs in this dish are meant to represent sawdust, as St. Joseph was a carpenter, and the rest of the simple ingredients are paired together purposefully to create a mild nutty, but sweet flavor profile in this dish.

Ingredients

Serves 8

1 Box Barilla® Spaghetti pasta
4 Tablespoons extra virgin olive oil, divided
2 Cups red onion, julienne
1/3 Cup golden raisins
1 Clove garlic, chopped
½ Cup breadcrumbs
1 Tablespoon Italian parsley, chopped
To taste Salt and black pepper

Method

Step 1

Bring a large pot of water to boil, cook pasta one minute less package directions.

Step 2

Meanwhile, sauté breadcrumbs with salt, pepper, garlic, 2 tablespoons of olive oil, salt & pepper until crispy, set aside.

Step 3

In a skillet sauté onion with olive oil for about ten minutes over medium heat with salt and pepper, when completely wilted add one cup of pasta cooking water and raisins, simmer for five more minutes.

Step 4

Drain pasta and toss with onion mixture.

Step 5

Stir in breadcrumbs and parsley before serving.
