2Cups shredded mozzarella, divided

¾Cup grated parmesan, divided

Method

Step 1

Preheat the oven to 180°C (350°F) and bring a large pot of salted water to a boil.

Step 2

Cook the jumbo shells for half the time indicated on the package, stirring gently to keep them from breaking. They should be al dente, since they'll finish cooking in the oven.

Step 3

Drain the jumbo shells and toss them with a drizzle of olive oil, then arrange them on a baking sheet in a single layer to cool. This prevents them from sticking together and makes filling them easier.

Step 4

Grease a baking dish of about 33 × 23 cm and spread 1 cup of marinara sauce over the bottom. This layer keeps the shells moist as they bake and prevents them from sticking or burning.

Step 5

In a large bowl, combine the ricotta, 1½ cups of mozzarella, and ½ cup of Parmesan, then season with salt and pepper. This creates a filling that's creamy yet stable, so it holds its shape while baking.

Step 6

Arrange the filled shells in the baking dish with the opening facing up. Spoon over the remaining marinara and top with the remaining cheeses.

Step 7

Cover with foil and bake for about 20 minutes. Remove the foil and bake for another 5–10 minutes, until the cheese is golden and bubbly.

Step 8

Remove from the oven, finish with fresh basil, and let rest for 5 minutes before serving. Resting allows the filling to set and makes the portions easier to serve.
