Ingredients
Serves 6
| 1 | Box Barilla® Tri-Color Penne |
| 4 | Tablespoons extra virgin olive oil divided |
| 1 | Tablespoon lemon juice |
| 3 | Each tomatoes diced |
| ½ | Lb. fresh mozzarella diced |
| ¼ | Cup Parmigiano-Reggiano shredded |
| 8 | Basil leaves |
| To taste | Salt and black pepper |

Method
Step 1
Bring a large pot of water to a boil. Season with salt and cook penne pasta 1 minute less than package directions.
Step 2
Drain tri-color penne and toss with 2 tablespoons of olive oil, set aside.
Step 3
Combine 2 tablespoons olive oil, lemon juice, tomatoes and basil in a large bowl and season with salt and pepper.
Step 4
Add cold tri-color penne and stir to combine.
Step 5
Add cheese and mix well. Serve cold pasta salad.
