1Box Barilla^® Tri-Color Penne

4Tablespoons extra virgin olive oil divided

1Tablespoon lemon juice

3Each tomatoes diced

½Lb. fresh mozzarella diced

¼Cup Parmigiano-Reggiano shredded

8Basil leaves

To tasteSalt and black pepper

Method

Step 1

Bring a large pot of water to a boil. Season with salt and cook penne pasta 1 minute less than package directions.

Step 2

Drain tri-color penne and toss with 2 tablespoons of olive oil, set aside.

Step 3

Combine 2 tablespoons olive oil, lemon juice, tomatoes and basil in a large bowl and season with salt and pepper.

Step 4

Add cold tri-color penne and stir to combine.

Step 5

Add cheese and mix well. Serve cold pasta salad.
