Ingredients for 8 people
- 1 box Barilla® Linguine
- 1 tbs. peanut or vegetable oil
- 1 cup creamy peanut butter
- 2 cups chicken broth
- 1 tbs. chili paste
- 1 tbs. honey
- 1 cucumber sliced thin
- 1 tbs. rice vinegar
- 1 tbs. sesame oil
- 2 tbs. cilantro
- ½ cup peanuts
- 1 carrot diced small
- 2 tbs. green onions diced
- 1 cup lump crab
- Salt and black pepper to taste
Bring a large pot of water to a boil.
Meanwhile, in a small pot bring chicken broth to a simmer, stir in peanut butter, chili paste and honey until the mixture is nice and smooth then set aside.
In two separate small bowls combine cucumber and carrots with rice vinegar, cilantro, green onions and peanut oil.
Cook pasta according to package directions, drain and cool down by rinsing it very briefly.
Season with sesame oil, salt and pepper.
Toss pasta with the peanut sauce.
Top with crab.
