Spaghetti with Garlic, Oil and Anchovies

Ingredients for 4 people      


  • 1 box spaghetti
  • 4 tablespoons extra virgin olive oil
  • 2 cloves garlic
  • 6 fresh anchovies
  • Pepper to taste
  • 1 tablespoon chopped parsley

    Heat oil in a pan over medium heat

     Sauté two peeled garlic cloves until golden brown, then discard
  3. 3
    Add rinsed, boned, chopped anchovies and sauté for 2 minutes
  4. 4
    Remove pan from heat and break apart anchovies with a fork

     Season with pepper and add chopped parsley
  6. 6
    Meanwhile, boil pasta in a large pot of salted water according to package directions

     Drain, reserving some cooking water, and toss with prepared sauce, adding a small amount of pasta cooking water, if necessary

    Serve hot
