Vermicelli soup

Ingredients

1 cup Barilla vermicelli
1 tablespoon olive oil
1 small onion, finely chopped
1 clove garlic, minced
1 carrot, granted
4 cups chicken or vegetable broth
To taste Salt and pepper
Fresh parsley for garnish

Method

Step 1

Heat olive oil in a pot and sauté onion, carrot and garlic until soft.

Step 2

Add the vermicelli and stir for 2–3 minutes until slightly golden.

Step 3

Pour in the broth and bring to a boil.

Step 4

Simmer for 10 minutes or until the vermicelli is tender.

Step 5

Season with salt and pepper, and garnish with parsley before serving.
