Vermicelli upma (savory breakfast)
Ingredients

| 1 cup | Barilla vermicelli |
| 1 tablespoon | Oil |
| 1/2 teaspoon | Mustard seeds |
| 1 | Small onion, finely chopped |
| 1/2 cup | Mixed vegetables (peas, carrots, etc.) |
| 1 1/2 cups | Water |
| To taste | Salt |
| Lemon juice and chopped coriander for garnish |

Method
Step 1
Roast the vermicelli in a dry pan until light golden and set aside.
Step 2
In another pan, heat oil and add mustard seeds until they pop.
Step 3
Add onion and sauté until soft, then add vegetables and cook for 2–3 minutes.
Step 4
Add water and salt, bring to a boil.
Step 5
Stir in the roasted vermicelli and cook on low heat until the water is absorbed.
Step 6
Garnish with lemon juice and coriander before serving.
