320g Barilla Gluten Free Fusilli or Penne
200g Capsicum
200g Vegan mozzarella, diced
200g Tofu, extra firm, diced
150g Onion, sliced
150g Zucchini, diced into cubes
150g Cherry tomatoes, quartered
40ml Extra Virgin Olive Oil
15g Nutritional yeast
TIP Fresh basil, kosher salt and pepper to taste

Method

Step 1

Clean the capsicum by removing the stalk, the inner seeds and the white membrane inside, then chop into thin slices or cubes.
