1 box | Barilla Lasagne pasta |
1 jar | marinara sauce |
4 tbsp | extra virgin olive oil, divided |
1 lb | beef, grounded |
1 | small onion, diced |
2 | small zucchinis, diced |
3 | small portobello mushrooms, diced |
1 lb | ricotta cheese |
2 | eggs |
6 | basil leaves |
1 cup | mozzarella cheese, shredded |
To taste | salt and black pepper |

Method
Step 1
Preheat oven to 375°F.
Step 2
Cook Barilla Lasagne pasta according to package directions.
Step 3
Drain and toss Barilla Lasagne pasta with 1 tbsp olive oil and lay flat on a sheet tray.
Step 4
Meanwhile, in a skillet sauté ground beef until fully cooked.
Step 5
Add sauce and 1/2 cup water; bring to a simmer.
Step 6
In a large bowl, stir veggies into the ricotta cheese and fold in eggs and basil.
Step 7
Spread filling onto the 16 Barilla Lasagne pasta sheets and roll them up.
Step 8
In a 13x9 inch dish, add 1 cup of meat sauce and spread evenly.
Step 9
Add lasagne rolls and cover with remaining sauce and cheese.
Step 10
Bake covered with foil 25 minutes.
Step 11
Remove foil and cook 5 additional minutes until cheese is brown.
Step 12
Remove from oven. Let rest 15 minutes before serving.
