Barilla Fettuccine Pasta with Asparagus

Use perfectly al dente Barilla Fettuccine pasta, fresh asparagus, and let the flavours of all the ingredients work their magic.

Ingredients

Serves 8

1 box Barilla Fettuccine pasta
2 tbsp extra virgin olive oil
2 tbsp shallots, minced
2 bunches asparagus, sliced thin
1 cup chicken broth
1 cup cherry tomatoes, quartered
1 tbsp fresh Italian parsley, chopped
1/2 cup parmesan cheese, grated

Method

Step 1

Bring a large pot of water to a boil.

Step 2

Sauté shallots in olive oil in a medium skillet over medium heat for 3 minutes.

Step 3

Add asparagus and season with salt and pepper; add broth, simmer for 2 minutes.

Step 4

Place approximately 1/3 of the sauce in a blender; cover and blend until well-combined.

Step 5

Return mixture to the skillet.

Step 6

Cook Barilla Fettuccine pasta in pot according to package directions.

Step 7

Drain Barilla Fettuccine pasta and toss for 2 minutes in the skillet with the sauce and tomatoes.

Step 8

Stir in cheese and parsley before serving.
