Ingredients

Serves 6

1 box Barilla Gluten Free Macaroni pasta
4 lbs clams or cockles
1/2 cup cooking sake
1/4 cup chiffonade shiso
To taste salt and pepper

For nori pesto

1 cup dried nori seaweed
3 tbsp toasted pine nuts
2 cloves garlic
3 tbsp parmesan cheese, grated
1 lemon, zested
1/4 tsp togarashi spice (or red chili flakes)
1/2 cup extra virgin olive oil

Method

Step 1

Bring a large pot of water to a boil. Season with salt and add Barilla Gluten Free Macaroni pasta. Cook according to package directions for 7 minutes; drain and set aside.

Step 2

Meanwhile, heat a shallow saucepan over high heat. Add the clams and shake the pan so the clams are in an even layer.

Step 3

Add the sake and cover the pan and cook until the clams open and release their juices, 3-5 minutes depending on the size of the clams.

Step 4

Add the pesto and the cooked Barilla Gluten Free Macaroni pasta to the clams and toss gently until everything is coated with the pesto.

Step 5

Taste and adjust seasoning with salt and pepper. Garnish with shiso and serve immediately.

Step 6

Note: The nori pesto can be made the day before and stored in the fridge. Bring to room temperature before using.
