Ingredients

Serves 6

1 box Barilla Gluten Free Penne pasta
4 tbsp extra virgin olive oil
4 boneless/skinless chicken thighs
1 Vidalia onion, julienned
1 red pepper, julienned
6 domestic mushrooms, quartered
3 cloves garlic, chopped
1 tbsp Cajun seasoning
1/2 cup white wine
1/2 cup heavy cream
1/2 cup parmesan cheese, grated
To taste salt and black pepper

Method

Step 1

Bring a large pot of water to a boil.

Step 2

Meanwhile, in a hot skillet, brown the chicken in olive oil over high heat for approximately 5 minutes.

Step 3

Add vegetables and Cajun seasoning and sauté for 3 additional minutes.

Step 4

Stir in wine, then season with salt and pepper, then reduce liquid by half.

Step 5

Add cream and bring to simmer.

Step 6

Meanwhile, cook Barilla Gluten Free Penne pasta according to package directions.

Step 7

Drain and toss with sauce; stir in cheese before serving.
