Barilla Gluten Free Penne Pasta with Mushrooms al Ajillo and Roasted Poblano Sauce

Originating from Spain, the term 'al Ajillo' means to cook with garlic-infused oil. In this recipe, garlic and guajillo pepper impart rich flavours to the oyster and button mushrooms. Paired with al dente Barilla Gluten Free Penne pasta in a creamy, roasted poblano pepper sauce, and finished with a sprinkle of cilantro and a zest of lime, this easy recipe delivers a fiesta of flavours!

Ingredients

Serves 4

1 box Barilla Gluten Free Penne pasta

For poblano sauce

1 poblano pepper, roasted with skin off
3 garlic cloves, minced
1/4 cup Spanish onion, sliced
2 cups 35% cream
2 tbsp butter
To taste salt and pepper

For Mushrooms al Ajillo

1/2 cup olive oil
4 cloves garlic, sliced
1 piece guajillo pepper, julienned
1 cup oyster mushrooms
1 cup button mushrooms
1/4 cup cilantro, chopped
1 lime, juiced

Method

Step 1

To make the poblano sauce: Place the poblano over the flame of a gas stove or grill. Continue to rotate until the skin is blackened. After it blackens, let it cool down and peel.

Step 2

In a pan over medium-high heat, sweat minced garlic and onion using the butter.

Step 3

Add roasted poblano pepper and cream and let all flavours combine together.

Step 4

Place everything in a blender or food processor and blend until smooth.

Step 5

Add the sauce to the pot and continue reducing, while seasoning with salt and black pepper to taste.

Step 6

To make Mushrooms al Ajillo: Add oil to a pan over medium heat and add sliced garlic until it gets golden.

Step 7

Add guajillo pepper until it gets darker in colour, then remove guajillo pepper and garlic from pan.

Step 8

Add the mushrooms to the same pan and season with salt to taste, let the mushrooms get golden.

Step 9

Add guajillo pepper and garlic back to the pan; finish with lime juice.

Step 10

Bring 4 litres of water to boil with salt, add Barilla Gluten Free Penne pasta and cook for 10 minutes.

Step 11

Drain, then add the Barilla Gluten Free Penne pasta in the poblano sauce and season to taste. Garnish with mushrooms and chopped cilantro to serve.
