A staple of Congolese cuisine, the goat meat is simmered in a homemade seven-spice blend and savoury beef broth, then served on a bed of perfectly al dente Barilla Gluten Free Rotini pasta. Finished with a touch of lemon, this recipe promises to dazzle any guest with its flavours!
Ingredients
Serves 4
1 box | Barilla Gluten Free Rotini pasta |
500g | goat meat, bone in, cubed |
100ml | olive oil |
30g | unsalted butter |
3 | green onions, chopped |
1 | medium-sized onion, chopped |
1 | parsley rod, chopped |
2 | fresh tomatoes, chopped |
1 | dash of tomato paste |
1/2 | fennel, sizzled |
500 ml | beef broth |
3 cloves | garlic, chopped |
1 | lemon, juiced |
For spice mix, mix together in a blender
1/2 tsp | smoked paprika |
1 tsp | turmeric |
1/2 tsp | curry powder |
1/2 tsp | fennel seeds, chopped |
1/2 tsp | cumin |
1 tsp | ginger powder |
1 tsp | chili flakes |
3 | cardamom pods |
To taste | salt and pepper |

Method
Step 1
Sear the goat cubes in a pot with olive oil at high heat. Remove the meat from the pot. Salt and pepper lightly to taste and set aside for later.
Step 2
In the same pot, add butter and cook the onions, fennel, parsley and garlic at medium heat for 2-3 minutes. Add the tomatoes, tomato paste, and cook 2-3 additional minutes.
Step 3
Put the goat cubes back in the pot, add the spice mix. Make sure the spices wrap the goat nicely to get all the flavours. Leave at medium heat and add the broth and then the chili flakes.
Step 4
Cover and let cook for 50 minutes, until the meat falls nicely off the bones and the sauce thickens up.
Step 5
Bring 4 L salted water to a boil and cook pasta for 8 minutes. Drain Barilla Gluten Free Rotini pasta and return to the pot with a pat of butter.
Step 6
Once the meat is cooked, turn off the heat. Add the lemon juice to the pot and season with salt and pepper to taste. Serve stew on top of Barilla Gluten Free Rotini pasta.
