Barilla Gluten Free Rotini Pasta with Charred Green Onion Pesto, Cashews and Cranberries

In this recipe, green onions are oven-charred then blended with cashews, Parmigiano Reggiano cheese, and olive oil to make a refreshing, yummy pesto. Perfectly al dente Barilla Gluten Free Rotini pasta is then tossed with the pesto and topped with cranberries for a sweet and tangy surprise in every bite!

Ingredients

Serves 6

1 box Barilla Gluten Free Rotini pasta
1 bunch green onions, charred
7 tbsp extra virgin olive oil, divided
1/4 cup cashews
1/4 cup Parmigiano Reggiano cheese, grated
3 ice cubes
1/2 cup dried cranberries, reconstituted in 1/2 cup hot water
To taste salt and black pepper

Method

Step 1

Preheat the oven to 425°F.

Step 2

Bring a large pot of water to a boil, add salt.

Step 3

Toss green onions with 1 tbsp olive oil in a large skillet over medium heat, season with salt and black pepper.

Step 4

Place green onions on a sheet tray and roast in the oven until lightly charred, about 10 minutes. Remove green onions from the oven and let them cool down.

Step 5

Combine green onions, cashews and Parmigiano Reggiano cheese in a blender, pulse for 5 seconds.

Step 6

Drizzle in the remaining olive oil, and season with salt and black pepper to taste.

Step 7

Add ice cubes and purée to make pesto. Remove pesto from the blender and place it in a large bowl.

Step 8

Cook Barilla Gluten Free Rotini pasta according to the package directions. Drain and reserve 1/2 cup cooking liquid.

Step 9

Add cooking liquid, Barilla Gluten Free Rotini pasta, and cranberries to the pesto; stir to combine before serving.
