Barilla Gluten Free Rotini Pasta with Crispy Pancetta, Cherry Tomatoes and Baby Kale

When the recipe calls for pancetta, you just know it's going to be a treat. For this easy-peasy recipe, perfectly al dente Barilla Gluten Free Rotini pasta is tossed with baby kale, and juicy cherry tomatoes that have been cooked with garlic and olive oil. Rendered pancetta and shredded Parmigiano Reggiano cheese are then added for a crispy and cheesy finish—a fitting finale of flavours!

Ingredients

Serves 6

1 box Barilla Gluten Free Rotini pasta
4 oz pancetta, sliced thin
2 cloves garlic, peeled and sliced thin
4 tbsp extra virgin olive oil
1 pt cherry tomatoes
2 cups baby kale
1/2 cup Parmigiano Reggiano cheese, shredded
To taste salt and black pepper

Method

Step 1

Bring a large pot of water to a boil, add salt.

Step 2

Render pancetta in a large skillet over medium heat until crispy.

Step 3

Drain fat on a paper towel and set aside.

Step 4

Cook garlic in the same skillet with olive oil for 1 minute over medium heat.

Step 5

Add cherry tomatoes and cover the skillet with a lid.

Step 6

Steam until cherry tomatoes pop open and release some of their juice.

Step 7

Cook Barilla Gluten Free Rotini pasta according to the package directions. Drain and toss with the sauce and baby kale in a large mixing bowl.

Step 8

Top with Parmigiano Reggiano cheese and crispy pancetta before serving.
