Barilla Gluten Free Rotini Pasta with Sautéed Summer Vegetables

A colourful, flavourful pasta with tomatoes, fava beans, zucchini and bell pepper

With this summertime pasta recipe, you can easily eat the 'rainbow' in one seating. Red onion, grape tomatoes, green fava beans, fresh zucchini and yellow bell pepper are sautéed beautifully before being tossed with perfectly al dente Barilla Gluten Free Rotini pasta. To add more colour, aroma and taste, just garnish with basil leaves and a generous sprinkle of Parmigiano Reggiano cheese.

Ingredients

Serves 6

1 box Barilla Gluten Free Rotini pasta
1/2 red onion, diced
5 tbsp extra virgin olive oil
1 zucchini, diced
10 fava bean pods, cleaned and peeled
1 pt grape tomatoes, washed
1 yellow bell pepper, roasted and diced
1/2 cup Parmigiano Reggiano cheese, grated
6 basil leaves, torn
To taste salt and black pepper

Method

Step 1

Bring a large pot of water to a boil, season with salt.

Step 2

Sauté onion in olive oil until translucent in a large skillet over medium heat, about 5 minutes.

Step 3

Add zucchini, fava beans, grape tomatoes and yellow pepper, sauté for 3 minutes over high heat.

Step 4

Cook Barilla Gluten Free Rotini pasta according to package directions. Drain and toss with veggies in a large mixing bowl.

Step 5

Add cheese (optional) and basil before serving.
