Ingredients
Serves 6
1/2 box | Barilla Gluten Free Spaghetti pasta, broken into 1 inch pieces |
1 | onion, diced |
2 tbsp | thyme, chopped |
4 tbsp | extra virgin olive oil, divided |
3 cloves | garlic, chopped |
3 cans | chickpeas |
3 quarts | chicken stock |
1 14-oz can | tomatoes, chopped |
2 tsp | parsley chiffonade |
To taste | salt and black pepper |

Method
Step 1
Sauté onions, thyme with 3 tbsp olive oil in heavy large pot until translucent, about 5 minutes.
Step 2
Add garlic, cook additional 2 minutes.
Step 3
Stir in chickpeas (reserve 1 cup for garnish), broth, tomatoes and bring to a boil.
Step 4
Season with salt and black pepper, and simmer for 10 minutes.
Step 5
Process the remaining chickpeas with soup in small batches. Using a blender, process the soup until smooth.
Step 6
Transfer processed soup and reserved chickpeas to a large pot and bring to a boil.
Step 7
Add Barilla Gluten Free Spaghetti pasta and cook for half of the recommended time on the package.
Step 8
Rest soup for 10 minutes, then drizzle with the remaining olive oil and parsley before serving.
