1 box | Barilla Gluten Free Spaghetti pasta |
1/2 | cauliflower, cut into small florets |
4 tbsp | extra virgin olive oil + 2 tbsp for drizzling |
To taste | salt and black pepper |
1 cup | onion, diced |
1 tbsp | capers |
1/4 cup | golden raisins, soaked in 1 cup water |
1 tbsp | parsley, chopped |
1/2 cup | Parmigiano Reggiano cheese, grated |

Method
Step 1
Preheat the oven to 425°F and bring a large pot of water to a boil.
Step 2
Toss the cauliflower in 2 tbsp olive oil, season with salt and pepper.
Step 3
Place on a sheet tray and roast in the oven until golden brown.
Step 4
Meanwhile, in a large skillet sauté the onion in 2 tbsp olive oil.
Step 5
Cook the Barilla Gluten Free Spaghetti pasta according to package directions.
Step 6
Reserve 1 cup the cooking liquid and add it to the onions.
Step 7
Drain and add Barilla Gluten Free Spaghetti pasta to the sauce and cook for 1 minute over medium heat, stirring frequently until it becomes creamy.
Step 8
Add the cauliflower, capers and raisins and toss to combine.
