Ingredients
Serves 6
1 box | Barilla Gluten Free Spaghetti pasta |
5 | medium zucchini, peeled and diced |
2 tbsp | pine nuts |
1 | garlic clove, peeled and diced |
10 leaves | fresh basil, chopped |
10 leaves | fresh parsley, chopped |
5 leaves | fresh mint, chopped |
2 tbsp | romano cheese, grated |
8 tbsp | extra virgin olive oil, divided |
To taste | salt and black pepper |

Method
Step 1
Bring large pot of water to a boil, season with salt.
Step 2
Peel zucchini and reserve the centres.
Step 3
Process peel with pine nuts, garlic, herbs, cheese, salt and pepper in a blender until smooth.
Step 4
Drizzle in 6 tbsp olive oil, blend well to make pesto.
Step 5
Sauté zucchini's diced inner portion in a large skillet over medium heat for 1 minute.
Step 6
Cook Barilla Gluten Free Spaghetti pasta according to package directions.
Step 7
Drain Barilla Gluten Free Spaghetti pasta and toss with pesto and diced zucchini in a large mixing bowl before serving.
