Made with perfectly al dente Barilla Gluten Free Spaghetti pasta, zucchini, and aromatic herb pesto, it’s a dish that packs as flavourful a punch as any. Ingredients

Serves 6

1 box Barilla Gluten Free Spaghetti pasta
5 medium zucchini, peeled and diced
2 tbsp pine nuts
1 garlic clove, peeled and diced
10 leaves fresh basil, chopped
10 leaves fresh parsley, chopped
5 leaves fresh mint, chopped
2 tbsp romano cheese, grated
8 tbsp extra virgin olive oil, divided
To taste salt and black pepper

Method

Step 1

Bring large pot of water to a boil, season with salt.

Step 2

Peel zucchini and reserve the centres.

Step 3

Process peel with pine nuts, garlic, herbs, cheese, salt and pepper in a blender until smooth.

Step 4

Drizzle in 6 tbsp olive oil, blend well to make pesto.

Step 5

Sauté zucchini's diced inner portion in a large skillet over medium heat for 1 minute.

Step 6

Cook Barilla Gluten Free Spaghetti pasta according to package directions.

Step 7

Drain Barilla Gluten Free Spaghetti pasta and toss with pesto and diced zucchini in a large mixing bowl before serving.
