Ingredients

Serves 6

1 box Barilla Gluten Free Rotini pasta
4 tbsp olive oil, divided
1 cup yellow onion, diced
1 cup peas, thawed
1 bag baby spinach
2 cans tuna in oil, drained
2 cups heavy cream
3 cups cheddar cheese, shredded
1/2 cup Italian-style gluten free breadcrumbs
To taste salt and black pepper

Method

Step 1

Bring a large pot of water to boil and preheat the oven to 400°F.

Step 2

Meanwhile, add half of the olive oil to a pan and sauté onions over high heat until slightly translucent, about 4 minutes.

Step 3

Adjust the heat to medium and add peas and spinach until the spinach is wilted, then add the cream.

Step 4

Season with salt and pepper, bring to simmer, and gently fold in 2 cups cheese.

Step 5

Meanwhile, cook Barilla Gluten Free Rotini pasta according to package directions, then drain and toss with sauce and tuna.

Step 6

Place Barilla Gluten Free Rotini pasta in a 13x9 inch baking dish. Top with gluten free breadcrumbs, salt, pepper and remaining olive oil.

Step 7

Bake at 400°F until breadcrumbs turn crispy and golden, about 10 minutes.
