Barilla Pasta Chips with Spinach and Artichoke Dip

Check out this recipe by Registered Dietitian Nicole Osinga from @nicoleosinga_rd in a fresh take on the trendy recipe, accompanied by a spinach and artichoke dip. It's perfect for hosting a get-together or for snacking while watching a big game. The best part? It tastes just as good with premium Barilla Gluten Free Rotini pasta, too.

Ingredients

Serves 4

For the pasta chips

1/2 box Barilla Farfalle Pasta
1 tsp each of your favourite spices (try paprika, cumin and garlic powder for the first option; Italian spices with garlic and onion powder for the second)

For the Spinach and Artichoke Dip

1 1/2 cups raw cashews, soaked for 10 minutes in boiling water
3 tbsp nutritional yeast
1 1/2 tsp garlic powder
1 1/2 tsp onion powder
1 tsp lemon juice
1 cup almond milk
2 cups baby spinach, chopped
1 can artichoke hearts, drained and diced

Method

Chef's Tip

This recipe can also be made using Barilla Gluten Free Rotini pasta.

Step 1

Bring a large pot of water to a boil. Cook Barilla Farfalle pasta or Barilla Gluten Free Rotini pasta until al dente, according to package directions, and drain.

Step 2

Toss the pasta with your favourite spices.

Step 3

If using air fryer, bake at 400°F for 10-12 minutes, tossing several times. If using the oven, bake at 400°F for 17-20 minutes, tossing halfway.

Step 4

Preheat oven to 400°F.

Step 5

Using a blender, add the soaked cashews, nutritional yeast, garlic powder, lemon juice, and liquids to the bowl and process until nice and smooth, approximately 3 minutes.

Step 6

In a small or medium-sized baking dish, add the spinach and artichoke hearts, pour the cashew cheese over top and mix to combine.

Step 7

Place in the oven, covered for 10 minutes, then remove cover and bake another 10 minutes.

Step 8

Serve with the pasta chips.
