1 box Barilla Pennette Rigate pasta
1 small yellow onion, chopped
1 lb cremini mushrooms, sliced
2 cups mozzarella cheese, shredded
12 oz bacon, julienned
35 oz marinara sauce
1/4 cup Parmigiano Reggiano cheese, freshly grated
1 tbsp parsley, chopped

Method

Step 1

Preheat oven to 350°F.

Step 2

Cook Barilla Pennette Rigate pasta for 5 minutes.

Step 3

Heat bacon and onion in large skillet over medium-high heat. Add mushrooms, brown for 5 minutes over high heat.

Step 4

Stir in marinara sauce and reduce heat to medium-low; simmer 5 minutes.

Step 5

Stir sauce mixture and Parmigiano Reggiano cheese into Barilla Pennette Rigate pasta.

Step 6

Pour into greased 13x9 inch baking dish; cover and bake 20 minutes, then uncover.

Step 7

Sprinkle mozzarella cheese over Barilla Pennette Rigate pasta; continue baking 5-7 minutes or until cheese is melted.
