1 box | Barilla Rotini pasta |
4 tbsp | extra virgin olive oil |
1 14-oz package | frozen artichokes, quartered |
1/2 cup | black olives, chopped |
2 tbsp | capers, chopped |
1 | roasted red bell pepper, diced |
1 | roasted yellow bell pepper, diced |
2 tbsp | fresh oregano, chopped |
1/2 cup | Parmigiano Reggiano cheese, shredded |

Method
Step 1
In a large skillet, cook artichokes in 1 tbsp olive oil until lightly brown in colour. Remove from heat to cool.
Step 2
Bring a large pot of water to a boil.
Step 3
Season water with salt and cook Barilla Rotini pasta 1 minute short of recommended cooking time.
Step 4
Drain Barilla Rotini pasta and toss with 1 tbsp olive oil; place on sheet tray to cool down.
Step 5
Once cool, place in a large bowl and add all remaining ingredients. Toss to combine.
