Inspired by 'Eat, Pray, Love', this recipe by Pina Bresciani of @pinabresciani features a tomato-chili sauce, al dente Barilla Spaghetti pasta, and rich flavours that will have you closing your eyes in enjoyment, just like Julia Roberts in the movie!

Ingredients
Serves 2
1 box | Barilla Spaghetti pasta |
1 cup | guanciale, cut into thin strips |
1/4 cup | white wine (Pinot Grigio or similar) |
1 can (796 ml) | plum tomatoes, peeled |
To taste | dry chili pepper |
To taste | salt and pepper |
1/3 cup | pecorino romano cheese, grated, plus more for garnish |

Method
Step 1
In a large pan that will also fit the Barilla Spaghetti pasta, throw in the guanciale. Bring the pan to medium heat and cook the guanciale until crispy, about 10-15 minutes. Meanwhile, bring a pot of water to boil, and add salt once boiled.
Step 2
Once the guanciale is crispy, add white wine and deglaze. Let the alcohol evaporate off, for a few minutes.
Step 3
Remove the guanciale from the pan and set aside, but keep the rendered fat in.
Step 4
Mash the tomatoes with a fork or your hands and add them to the pan with the rendered guanciale fat. Add chili pepper, black pepper to taste, along with a tiny bit of salt.
Step 5
Let the sauce cook for 20-25 minutes, until reduced.
Step 6
When there are about 10-12 minutes left for the sauce to finish cooking, add the Barilla Spaghetti pasta to the boiling water. Cook until just before al dente.
Step 7
Add the guanciale back to the sauce.
Step 8
Add the Barilla Spaghetti pasta to the pan with the tomato sauce. Mix together for a few minutes, until sauce absorbs into the pasta. Add pecorino romano cheese and mix again.
Step 9
Remove from heat, plate and top with additional cheese to serve.
