A heavenly pasta of crisp breadcrumbs and Italian parsley atop raisins and red onion

Known as 'St. Joseph’s Day pasta', this Silician specialty combines breadcrumbs—representing the sawdust that St. Joseph saw a lot of as a carpenter—with raisins and al dente Barilla Spaghetti pasta in a blend of nutty and sweet flavours.

Best served with Riserva Ducale Chianti Classico

Taste profile: Well-balanced, with velvety tannins; firm acidity and a lingering finish of rosemary.

Ingredients

Serves 5

1 box Barilla Spaghetti pasta
1/2 cup breadcrumbs
To taste salt and black pepper
1 garlic clove, chopped
4 tbsp extra virgin olive oil, divided
2 cups red onion, julienned
1/3 cup golden raisins
1 tbsp Italian parsley, chopped

Method

Step 1

Place a pot of water to boil and cook Barilla Spaghetti pasta according to package directions.

Step 2

Sauté breadcrumbs with salt, pepper, garlic, and 2 tbsp olive oil until crispy. Set aside.

Step 3

At the same time, in a skillet, sauté onion with remaining olive oil and salt and pepper for about 10 minutes over medium heat. When completely wilted, add 1 cup pasta water and raisins, and simmer for 5 more minutes.

Step 4

Drain Barilla Spaghetti pasta 1 minute under the recommended cooking time, and toss with onion mixture. Stir in breadcrumbs and parsley before serving.
