1 box | Barilla Spaghetti pasta |
1 24-oz jar | marinara pasta sauce |
2 large | red sweet peppers |
4 cups | baby arugula |
2 tbsp | butter |
8 | eggs |
To taste | salt and pepper |
3/4 cup | parmesan cheese, freshly shaved |

Method
Step 1
Quarter sweet peppers lengthwise, remove and discard stems, seeds and membranes, then place them, cut side down, on a foil-lined baking sheet, 4-5 inches from the broiler.
Step 2
Broil peppers 8-10 minutes or until skins are blistered and dark, then remove from oven, bringing up the sides of foil to seal.
Step 3
Let peppers stand about 15 minutes, then open foil and peel peppers, discarding skin.
Step 4
Chop peppers and stir into marinara sauce.
Step 5
Transfer marinara sauce mixture to an extra-large skillet and bring to a low simmer.
Step 6
Bring 4-5 litres water to a rolling boil, adding salt to taste and the Barilla Spaghetti pasta, stirring gently.
Step 7
Cook Barilla Spaghetti pasta according to package directions; remove from heat and drain well.
Step 8
Add Barilla Spaghetti pasta to the skillet and toss with the marinara mixture, stirring in the arugula.
Step 9
In a non-stick extra-large skillet, heat butter over medium-high heat until hot.
Step 10
Break eggs, one at a time, into the pan; season with salt and pepper.
Step 11
Reduce heat to low and let cook until whites are completely set and yolks begin to thicken but are not hard.
Step 12
Use a spatula to carefully flip each egg, and cook to desired doneness.
Step 13
Serve Barilla Spaghetti pasta immediately, topped with fried eggs and parmesan cheese.

Jarred roasted red peppers work in a pinch. But to really maximize the fresh bold flavours of this dish, use fresh red sweet peppers and roast them yourself.
