Everything Delish's Barilla Spaghetti Pasta Carbonara

A modern twist on carbonara with pancetta, pecorino romano and parmesan cheese

Originating in Lazio, Spaghetti Carbonara has been popular since the 1940s. Featuring beautifully al dente Barilla Spaghetti pasta, this recipe by Jamie Milne of @everything_delish is a modern twist on the traditional carbonara.

Best served with Ruffino Lumina Pinot Grigio

Ingredients

Serves 4

1 box Barilla Spaghetti pasta
4 oz pancetta
1 cup pecorino romano cheese
1 cup parmesan cheese
2 eggs
1 tbsp black pepper
1 cup pasta water
To taste salt

Method

Step 1

Bring a large pot of salted water to boil. Add Barilla Spaghetti pasta and cook for 10 minutes, until al dente. Reserve 1 cup of pasta water and set aside.

Step 2

Add pancetta to a pan over medium-high heat and cook for 6-7 minutes. Once cooked, add to a paper towel-lined plate.

Step 3

In a medium-sized bowl, combine pecorino romano and parmesan cheese. Add in eggs and black pepper. Mix together until combined. Add pasta water as needed to get the sauce very creamy.

Step 4

Add Barilla Spaghetti pasta to a large bowl and add sauce over top. Mix together until combined, add pasta water as needed.

Step 5

Add pancetta to the Barilla Spaghetti pasta and combine. Finish with black pepper to serve.
