1 box | Barilla Farfalle pasta |
1/4 cup | fava beans (may substitute lima beans) |
1/2 cup | broccoli florets |
1/2 cup | asparagus, chopped |
1/4 cup | fresh green beans, chopped |
1/4 cup | extra virgin olive oil |
1/2 cup | onions, chopped |
1 tbsp | garlic, minced |
1/2 cup | cherry tomatoes, halved |
1/2 cup | chicken stock (may substitute vegetable stock) |
1/4 cup | fresh basil, chopped |
2 tbsp | Parmigiano Reggiano cheese |

Method
Step 1
Bring a large pot of water to a boil.
Step 2
Shell and clean the fava beans or use frozen lima beans.
Step 3
Place a large saucepan filled with salted water over high heat.
Step 4
When water boils, stir in the fava beans or lima beans, broccoli, asparagus, and green beans.
Step 5
Blanch for 1 minute; then transfer to a bowl of cold water for 1 minute to stop the cooking process.
Step 6
Drain vegetables and reserve.
Step 7
Heat olive oil in a large skillet placed over medium heat.
Step 8
Add onion and garlic to the skillet. Cook and stir until garlic is just golden.
Step 9
Add drained green vegetables, tomatoes, broth, and basil to the onion mixture.
Step 10
Stir and cook over low heat; then season with salt and pepper to taste.
Step 11
Cook Barilla Farfalle pasta according to package directions, then drain and toss with sauce and grated cheese.
Step 12
Place in a serving dish and sprinkle with additional grated cheese if desired.
