Barilla Fettuccine Pasta with Wild Mushrooms

This Trentino-Alto Adige recipe hails from the mountains of Northern Italy, known for its diverse ecosystem. In this recipe, Chef Devan Rajkumar of @chefdevan showcases four mushrooms with premium Barilla Fettuccine pasta for a medley of gourmet flavours.

Ingredients

Serves 4

1 box Barilla Fettuccine pasta
3 garlic cloves, finely minced
1 package (14 g) dried chanterelle mushrooms
1 package (14 g) dried morel mushrooms
1 onion, finely diced
1 tsp chili flakes
1 package (14g) dried porcini mushroom
1 cup dried oyster mushrooms, torn
1 tbsp chives, finely chopped
1 tbsp parsley, finely chopped
1/4 cup Parmigiano Reggiano cheese + 2 tbsp, reserved for garnishing
2 tsp lemon juice
2 tbsp lemon zest
2 tbsp olive oil
To taste salt and pepper

Method

Step 1

Place pan over low-medium heat, then add olive oil.

Step 2

Add diced onion and garlic, then season with salt and pepper.

Step 3

Cook until translucent, about 2-3 minutes. Add chili flakes, chanterelle, morel, porcini, and oyster mushrooms. Cook for 3-4 minutes. Add parsley.

Step 4

In a large pot, bring water to a boil and salt generously. Add Barilla Fettucine pasta to the boiling water and cook according to package directions for 12 minutes, or until al dente.

Step 5

Drain and reserve 1/4 cup of pasta cooking liquid.

Step 6

Add Barilla Fettucine pasta to the pan with the mushrooms, adding the pasta cooking liquid as needed.

Step 7

Gently toss the Barilla Fettucine pasta with the mushrooms and add Parmigiano Reggiano cheese, chives and lemon juice, tossing again to incorporate.

Step 8

Garnish with more Parmigiano Reggiano cheese and lemon zest, and serve warm.
