Barilla Gluten Free Penne Pasta with Vegetables

Ingredients
Serves 6
1 box | Barilla Gluten Free Penne pasta |
6 tbsp | extra virgin olive oil |
1 cup | onion, diced |
1 | garlic clove, chopped |
2 cups | butternut squash, diced |
2 cups | shiitake mushrooms, sliced thin |
1 tbsp | fresh thyme |
To taste | salt and pepper |
1/2 cup | Parmigiano Reggiano cheese, grated |

Method
Step 1
Preheat the oven to 425°F. Toss the butternut squash and mushrooms separately with olive oil and season with salt, pepper and thyme.
Step 2
Place each vegetable individually on cookie sheets and roast in the oven until fully cooked and browned, but not burnt, for about 15 minutes.
Step 3
Meanwhile, in a large skillet, sauté the onions in olive oil and sauté for 3-4 minutes.
Step 4
Add the garlic and sauté for an additional minute. Season with salt and pepper and set aside.
Step 5
Bring a large pot of water to a boil and cook the Barilla Gluten Free Penne pasta according to package directions. In the meantime, combine all the vegetables in the skillet.
Step 6
When Barilla Gluten Free Penne pasta is almost cooked, add 1 cup pasta cooking water to the vegetables and bring them to a simmer.
Step 7
Drain and combine Barilla Gluten Free Penne pasta with the vegetables.
Step 8
Remove the skillet from the heat, fold in the cheese and drizzle with more olive oil to finish.
