You've tried regular pesto, but have you tried kale pesto? It uses the same ingredients as basil pesto, but with added flavour from the kale. Mix up your very own kale pesto from scratch, toss with perfectly al dente Barilla Farfalle pasta and some seared shrimp for a kick of protein, and you've got yourself a fabulous fresh side dish or appetizer.
Ingredients
Serves 5
1 box | Barilla Farfalle pasta |
2 cups | torn kale leaves, stems removed |
1 cup | fresh basil leaves |
1 clove | garlic |
1/4 cup | walnuts, toasted |
6 tbsp | extra virgin olive oil |
2 tbsp | lemon juice |
To taste | salt and pepper |
1/2 cup | Romano cheese |
1/2 lb | medium shrimp, peeled and deveined |

Method
Step 1
Bring a large pot of water to a boil and cook Barilla Farfalle pasta according to box directions.
Step 2
In a food processor, combine the kale leaves, basil, garlic, walnuts and salt. Pulse until finely chopped.
Step 3
While the processor is still running, add in the olive oil and lemon juice. Scrape down the sides, and process again.
Step 4
Add the cheese and pulse to combine.
Step 5
In a large skillet, heat remaining olive oil over medium-high heat. Season the shrimp with salt and pepper then sear on both sides for approximately 30 seconds or until shrimp is cooked through.
Step 6
In a large bowl, toss the pesto with cooked Barilla Farfalle pasta and shrimp, then serve.
