Barilla Linguine Pasta with Cannellini Beans, Zucchini and Cherry Tomatoes

This recipe by Chef Lorenzo Boni is summertime on a plate! The cannellini beans add a fluffy texture and nutty flavour to the perfectly al dente Barilla Linguine pasta. While the zucchini and shrimp refresh the palate, the cherry tomatoes lift up the dish with its bright notes. Simply delicious and easy to make, you can also remove the shrimp to enjoy an equally satisfying vegetarian version.

Ingredients

Serves 3

1 box Barilla Linguine pasta
1/4 cup extra virgin olive oil
1/2 cup Parmigiano Reggiano cheese
1/4 cup leeks
6 oz cannellini beans, drained
1 cup zucchini, diced small
1 cup cherry tomatoes, halved
1/4 cup fresh basil, sliced
6 oz shrimp, washed and removed from shell (optional)
To taste salt and pepper

Method

Step 1

Place a pot of water to boil; cook Barilla Linguine pasta to al dente according to package directions.

Step 2

In a skillet, infuse diced leek with extra virgin olive oil over medium heat for 3-4 minutes.

Step 3

Stir in shrimp and beans, sauté 1 minute over high heat.

Step 4

Add zucchini and cherry tomatoes and season with salt and pepper. Blister over high heat for 2 minutes.

Step 5

Drain pasta, reserving 1/2 cup of cooking water, and finish everything in the skillet over high heat.

Step 6

Stir in freshly cut basil before serving.
