3/4 box | Barilla Orzo pasta |
3 3/4 cups | pumpkin |
2 tbsp | olive oil |
1 | shallot |
To taste | salt and black pepper |
To taste | nutmeg |
1-1.2 L | vegetable stock |
1/4 cup | cheese, grated |

Method
Step 1
Prepare a vegetable stock and keep it hot.
Step 2
Cut the pumpkin into small pieces and slice the shallots. In a frying pan, heat up oil, and add the shallots with a pinch of salt. When beginning to soften, add the pumpkin and fry for 2 minutes.
Step 3
After 2 minutes, add 1-2 ladles stock to the pumpkin and let it cook for around 10 minutes.
Step 4
When it feels soft, roughly mash with a fork.
Step 5
Add the Barilla Orzo pasta and start to cook it again: add a ladle of broth, stir, and add the next ladle only when the previous one has been absorbed.
Step 6
Add salt, pepper and nutmeg. When cooked, stir in the cheese and serve hot.
