Ingredients

1 box | Barilla Rotini pasta |
2 tbsp | olive oil |
1/2 | red onion, finely chopped |
3 | garlic cloves, minced |
1 28-oz can | tomatoes, diced |
1 tbsp | tomato paste |
1/3 cup | black olives, pitted and sliced |
4 tbsp | fresh cilantro, finely chopped and divided |
1 tbsp | dried oregano |
1 tbsp | capers |
3 | bay leaves |
1 | jalapeño pepper, unseeded and finely chopped |
2 tbsp | golden raisins or regular raisins |
To taste | salt and pepper |
1 lb | large shrimp, peeled and deveined |
Cilantro, chopped for garnish | |
Parmigiano Reggiano cheese, grated for garnish |

Method
Step 1
Bring a large pot of salted water to a boil over high heat.
Step 2
Heat the oil in a large non-stick skillet over medium-high heat.
Step 3
Add the onion and sauté until translucent, about 6 minutes.
Step 4
Add the garlic, tomatoes, paste, olives, 3 tbsp cilantro, oregano, capers, bay leaves, jalapeño, raisins, and salt; bring to a boil. Reduce the heat and simmer for 10 minutes.
Step 5
Add shrimp and cook for 7 minutes until opaque.
Step 6
Add the Barilla Rotini pasta to the boiling salted water and cook according to package directions; then drain.
Step 7
Remove sauce from heat and discard bay leaves.
Step 8
Toss the sauce with the Barilla Rotini pasta and remaining cilantro.
