Barilla Rotini Pasta with Shrimp a la Veracruzana

Ingredients

Serves 8

1 box Barilla Rotini pasta
2 tbsp olive oil
1/2 red onion, finely chopped
3 garlic cloves, minced
1 28-oz can tomatoes, diced
1 tbsp tomato paste
1/3 cup black olives, pitted and sliced
4 tbsp fresh cilantro, finely chopped and divided
1 tbsp dried oregano
1 tbsp capers
3 bay leaves
1 jalapeño pepper, unseeded and finely chopped
2 tbsp golden raisins or regular raisins
To taste salt and pepper
1 lb large shrimp, peeled and deveined
Cilantro, chopped for garnish
Parmigiano Reggiano cheese, grated for garnish

Method

Step 1

Bring a large pot of salted water to a boil over high heat.

Step 2

Heat the oil in a large non-stick skillet over medium-high heat.

Step 3

Add the onion and sauté until translucent, about 6 minutes.

Step 4

Add the garlic, tomatoes, paste, olives, 3 tbsp cilantro, oregano, capers, bay leaves, jalapeño, raisins, and salt; bring to a boil. Reduce the heat and simmer for 10 minutes.

Step 5

Add shrimp and cook for 7 minutes until opaque.

Step 6

Add the Barilla Rotini pasta to the boiling salted water and cook according to package directions; then drain.

Step 7

Remove sauce from heat and discard bay leaves.

Step 8

Toss the sauce with the Barilla Rotini pasta and remaining cilantro.
