Barilla Spaghetti Pasta Carbonara with Chorizo

Creamy carbonara in a pecorino romano cheese sauce, with a smoky twist of chorizo

A classic carbonara, with a bit of a twist! Depending on what you have in the fridge, you could substitute the cured pork for chorizo sausage for a reinvented, smoky taste! In just 15 minutes, toss together perfectly al dente Barilla Spaghetti in a creamy pecorino romano cheese sauce, for a simply delicious lunch or dinner that has a premium vibe.

Ingredients

Serves 2

1/3 box Barilla Spaghetti pasta
3/4 cup pecorino romano cheese, grated
3 egg yolks
2.8 oz chorizo
To taste black pepper, salt and thyme

Method

Step 1

Cook Barilla Spaghetti pasta in a large pot of salted water.

Step 2

Meanwhile, cut chorizo into cubes and put in a large pan. Gently brown with oil.

Step 3

In the meantime, beat egg yolks with the pecorino romano cheese and 2 spoons boiling pasta water. Add freshly ground black pepper.

Step 4

When the Barilla Spaghetti pasta is cooked until al dente, drain it and put it in the pan with the chorizo.

Step 5

Away from the heat, add the beaten egg yolks, with 1 tbsp cooking water for a creamy result.

Step 6

Stir for a minute and sprinkle with cheese, thyme and black pepper.

Chef's tip

The perfect carbonara is creamy, without lumps of eggs too coagulated or with yolks too liquid. To better control the right coagulation and the temperature, pour the yolk mixture in while bringing the pan out of the fire.
