Ingredients

1 box | Barilla Lasagne pasta |
4 tbsp | extra virgin olive oil |
2 | celery stalks, diced |
2 | medium carrots, diced |
1 | medium yellow onion, diced |
24 oz | domestic mushrooms, ground |
1 lb | firm tofu, diced |
1/2 cup | white wine, dry |
3 tbsp | tomato paste |
1/4 cup | almond flour, lightly toasted |
To taste | salt and black pepper |

Method
Step 1
Place a pot of water to boil. Meanwhile, in a skillet sauté celery, carrots, and onion with oil until nice and golden, about 15 minutes over medium heat.
Step 2
Add mushrooms and tofu and brown, about 10 minutes. Stir in wine and evaporate well.
Step 3
Add tomato paste, 1 1/2 cup of water and bring to boil, season with salt and black pepper. Reduce water over medium heat.
Step 4
Meanwhile, cook Barilla Lasagne pasta sheets according to package directions, drain and cool down.
Step 5
Spread 1/4 sauce on the bottom of an oiled 13x9 inch baking pan, cover with 4 Barilla Lasagne pasta sheets, add 1/4 sauce. Repeat 2 more times.
Step 6
Bake Barilla Lasagne pasta in the oven at 400°F for 25 minutes. Sprinkle almond flour and bake few more minutes until slightly brown. Let sit 10 minutes before serving.
