1 box | Barilla Rotini pasta |
4 tbsp | extra virgin olive oil |
1 lb | medium shrimp, peeled and deveined |
4 cups | baby arugula |
2 pts | grape tomatoes, halved |
1/4 cup | Parmigiano Reggiano cheese, grated |
To taste | salt and black pepper |

Method
Step 1
In a large skillet, heat the olive oil over medium-high heat, then add the shrimp and cook on both sides until slightly brown.
Step 2
Add the arugula and tomatoes, season with salt and black pepper and cook for one minute.
Step 3
Cook Barilla Rotini pasta for 7 minutes for perfect al dente texture, then drain, reserving 1/2 cup of cooking water. Combine with the shrimp, top with cheese, serve and enjoy.
