1/2 box | Barilla Lasagne pasta |
9 cups | butternut squash, diced (1/2 inch cubes) |
3 tbsp | extra virgin olive oil |
3 tbsp | Za’atar |
3/4 cup | vegetable stock |
To taste | sea salt and black pepper |
3/4 cup | walnuts, toasted, chopped |
3/4 cup | non-fat Greek yogurt |
2 | lemons, grated zest |

Method
Step 1
Preheat oven to 450°F.
Step 2
Cook Barilla Lasagne pasta according to package directions.
Step 3
Toss squash in olive oil and Za’atar to combine, place on non-stick baking sheet. Bake for 20-25 minutes until soft and golden brown.
Step 4
In a food processor, purée squash, vegetable stock, salt and pepper.
Step 5
Cut each cooked Barilla Lasagne pasta sheet into three 2 1/2 inch squares.
Step 6
For each parfait, layer 4 Barilla Lasagne pasta squares with 1/4 cup squash purée.
Step 7
Top with 1 tbsp yogurt and garnish with walnuts and lemon zest.
