| 320g | Barilla Gran Ruote |
| 1 | Clove of garlic |
| 1 | Small fresh red chili |
| 1 | Avocado |
| 120 ml | Evoo |
| Juice of half a lemon | |
| 4 | Medium ripe vine tomatoes |
| 1 | Small red onion |
| 1 | Clove of garlic |
| 1 | Fresh red chili |
| 100 g | Sour Cream |
| Small bunch of | Chives |
| To taste | Salt |
| To taste | Sriracha (or any other spicy sauce) |

Method
Step 1
Blend the avocado with 40 ml of Evoo, salt and lemon juice. Adjust with water as needed to obtain a smooth paste. Reserve.
Step 2
Cut the tomatoes in quarters and remove all seeds and pulp, then dice them and reserve. Dice the onion very finely and gently stew it in another 40 ml evoo. When the onion is translucent, add the tomato dice and cook for a couple of minutes with sriracha to taste. Reserve.
Step 3
Thinly slice the chives and add them to the sour cream. Add a little water to obtain a loose, easily spoonable sauce. Reserve. Meanwhile cooking the Gran Ruote in plenty of salted water until “al dente”.
Step 4
Stir-fry the garlic clove with the remaining Evoo and the deseeded chili. Drain and toss in the pan containing the oil, garlic and chili. Spread some avocado sauce on the plate, top with the wheels, add a spoonful of spicy tomatoes and dress with some sour cream.
