For the Pesto sauce
4 | Cups basil leaves |
2.5 | Tbs pine nuts |
4 | Tbs Parmigiano cheese, grated |
2.5 | Tbs g Romano cheese, grated |
1 | Clove of garlic |
4 | Tbs EVOO |
For the béchamel
2 | 1/5 cup milk |
2 | Tbs butter |
3 | Tbs all-purpose gluten free flour |

Method
Step 1
Blend the pine nuts and garlic in a blender. Add the basil leaves (washed and dried) and EVO without turning off the blender. Add half of the grated Parmigiano cheese (25 g), the Pecorino cheese and adjust the density by adding more oil if necessary.

Peel and cut the potatoes into cubes, clean the green beans and cut them into pieces also. Boil the potatoes and green beans in boiling water to al dente and drain.

Melt the butter in a pan on a medium heat. Add the flour and whisk constantly in order to avoid lumps. Pour in the milk, previously heated,. Bring to a boil for a few minutes and adjust salt.

To make the lasagna, place a bit of béchamel, pesto, green beans and potatoes on the bottom of a baking dish and cover with the pasta sheets. Repeat 3 more times until you have 4 layers. Cover the last layer only with the béchamel, the remaining Parmigiano cheese and some green beans and potatoes..
