| 1 | box Barilla Jumbo Shells |
| 1 | lb lean ground beef |
| 1 | small shallot, minced |
| 1 | garlic clove, minced |
| 1 | tbsp tomato paste |
| ½ | tbsp dried oregano |
| ½ | tsp dried basil |
| ½ | tsp dried rosemary |
| ½ | tsp fennel |
| ¼ | cup mascarpone (or ricotta) |
| ½ | cup shredded mozzarella |
| ¼ | cup freshly grated Parmigiano Reggiano |
| 1-2 | tbsp fine breadcrumbs |
| 1 | tbsp finely chopped parsley |
| Salt and freshly cracked black pepper |

Method
Step 1
Cook Barilla Jumbo Shells in a large pot of salted boiling water until just shy of al dente. Drain and lay flat to cool.
Step 2
In a skillet over medium heat, cook ground beef with shallot and garlic until browned.
Step 3
Stir in tomato paste, oregano, basil, rosemary or fennel, salt and pepper. Cook until the mixture is concentrated and mostly dry. Remove from heat and cool.
Step 4
In a bowl, combine cooled beef mixture with mascarpone, mozzarella, Parmigiano, breadcrumbs and parsley.
Step 5
Spoon filling into one shell and gently press a second shell on top to seal.
Step 6
Lightly brush with olive oil and sprinkle with breadcrumbs and Parmigiano.
Step 7
Air fry at 400°F for 6–8 minutes until golden and crisp.
Step 8
Serve warm with marinara sauce for dipping.
