Method

Step 1

Cut the eggplants into thick slices and transfer on to a baking sheet. Salt them lightly and let them sweat for about 10 minutes. Remove excess moisture with a paper towel. Drizzle olive oil all over the eggplant slices.

Step 2

Light up the barbecue and grill them until they become tender and slightly charred.

Step 3

Using a 9x7 inch ceramic baking dish, assemble the lasagna starting with a drizzle of olive oil, the tomato sauce and 3 Barilla Oven-Ready Lasagne sheets. Add the grilled eggplant and spread the ricotta evenly. Repeat this step 5 more times and top with slices of mozzarella cheese.

Step 4

Bake at 375°F for about 40 minutes.

Step 5

Let it rest for about 15 minutes before serving and top with basil leaves a a drizzle of olive oil.
