Barilla Open Recipes Traditional Carbonara Spaghetti

Ingredients

Serves 8

1 box Barilla® Gluten Free Spaghetti
5 Egg yolks
2/3 cup Pecorino Romano cheese, grated
6 oz guanciale (cured unsmoked pork jowl) or pancetta
to taste salt and black pepper

Method

Step 1

In a bowl, beat egg yolks with a pinch of salt and 2/3 of the grated Pecorino cheese.

Step 2

Cut the guanciale into ½ inch strips , and place in a large skillet over medium heat until the fat melts. Fry lightly.

Step 3

Cook pasta according to package directions, and drain. Reserve a little bit of cooking water.

Step 4

Pour pasta into the pan containing the guanciale and mix.

Step 5

Turn off the heat, add the beaten eggs mixed with the Pecorino cheese, cooking water, and stir for 30 seconds.

Step 6

Finish the dish by sprinkling the remaining grated pecorino cheese on top and serve.
