Ingredients

1 box | Barilla® Spaghetti |
5 | Egg yolks |
2/3 cup | lactose-free Pecorino or other aged sheep milk |
6 oz | guanciale (cured unsmoked pork jowl) or pancetta |
to taste | salt and black pepper |

Method
Step 1
In a mixing bowl, beat egg yolks with a pinch of salt and all the grated, naturally lactose-free cheese.

Cut the guanciale into ½ inch strips , and place in a large skillet over medium heat until the fat melts. Fry lightly.

Cook pasta according to package directions, and drain. Reserve a little bit of cooking water.

Pour pasta into the pan containing the guanciale and mix

Turn off the heat, add the beaten eggs mixed with the Pecorino cheese, cooking water, and stir for 30 seconds.
Step 6
Finish the dish by sprinkling the remaining grated pecorino cheese on top and serve.
