Ingredients

Serves 8

1 box Barilla® Spaghetti No.5
6 oz Guanciale (cured unsmoked pork jowl) or pancetta
5 Large egg yolks
2/3 cup Pecorino Romano cheese grated
To taste Black Pepper
To taste Salt

Method

Step 1

In a bowl, beat egg yolks with 2/3 of the grated Pecorino cheese and pepper.

Step 2

Cut the guanciale into 1/2 inch strips, and place in a large skillet over medium heat until the fat melts. Fry lightly.

Cook pasta according to package directions, and drain. Reserve a little bit of cooking water.

Step 4

Pour pasta into the pan containing the guanciale, and mix.

Step 5

Turn off the heat, add the beaten eggs mixed with the Pecorino cheese, cooking water, and stir for 30 seconds.

Step 6

Finish the dish by sprinkling the remaining 1/3 grated Pecorino cheese on top and serve.
