4 | Tbsp EVOO |
½ | Onion, diced |
1 | Garlic clove, minced |
8 | Oz mixed mushrooms, sliced |
2 | Cups baby spinach |
1 | ½ cup lactose free heavy cream |
1 | Cup lactose free Parmigiano cheese, grated |
1 | Tbsp nutmeg |

Method
Step 1
Bring cream to a simmer. Whisk in nutmeg, 130 g of Parmigiano, sea salt, and black pepper. Turn off heat and set aside.

In a skillet over medium / high heat add 1 tbsp EVO, chicken , salt and pepper. Cook chicken for 3-4 minutes or until browned and fully cooked, remove from the pan and set aside.

Add remaining oil to the same skillet with onion. Sauté for 1-2 minutes then add garlic.
